Wakame is probably one of the most widely recognised seaweeds in Asian gastronomy, prized for its versatility and balance. It features broad, wavy, and delicate dark green leaves that expand considerably after soaking. On the palate, it offers a fresh, iodised, and slightly sweet profile, with mild vegetal notes and an elegant umami. It is a more approachable and balanced seaweed, capable of adding maritime character without overpowering. Texture is one of its greatest attributes. Once rehydrated, it becomes soft, silky, and extremely pleasant in the mouth, working particularly well in salads, soups, risottos, fish, seafood, and vegetable dishes. Beyond its taste profile, it also brings volume and movement to plating, creating more organic and dynamic compositions. It is a highly valued ingredient for its ease of use and its ability to enrich a dish both visually and aromatically. All of our seaweeds are preserved in salt, and therefore require soaking before use.
