The cheese leaf, medium to large in size, ranges between 5 and 8 cm in length. It has an elongated shape resembling a heart, with the upper side being dark green and the underside purplish, and a slight fuzz that gives it a velvety touch. It has an earthy aroma, with notes of moss and aged cheese, and a rich, bitter, earthy flavour with hints of nuts. Available all year round, it visually enhances various dishes. It can be used raw, cooked, sautéed, fried, in tacos and wraps, or for making pesto. It pairs well with grilled meats, in salads in small pieces, to add a touch of nuts, bitterness, and earthiness, to aged and fermented cheese dishes that call for it. The obvious pairing is with snacks and dishes featuring strong cheeses, honey, and nuts.
