Kinome or Sanchō is a native Japanese pepper whose edible leaves are pleasantly aromatic, with a fresh, citrusy, mild and delicate flavor, reminiscent of yuzu or kaffir lime, with some spices, and which cause a slight numbness/tingling sensation in the mouth similar to Szechuan buds. They go very well with fish and shellfish dishes, are the perfect touch in cocktails and infusions and can also be used in desserts or between courses due to their palate-cleansing effect.
